Pancakes batter cooling
After fruit salad, fried vegetables, rice mixes and fresh cheese, the cryogenic mixer is now used for pancakes batter.
STOLZ cryogenic mixer applications are very varied
After acquiring a solid experience in frozen, sticky or fragile products, such as fruit and vegetables, fresh bacon, or rice, such equipement has been used recently in processes requiring an accurate temperature control, for instance fresh cheese preparation.
New success today: the cooling of pancake batter. Those tests were carried out for Albfood corporation in Germany.
In order to obtain a perfect control of the pancake batter temperature, tests were carried out with a pilot cryogenic mixer fitted with a nitrogen injection device. The gas process has been developped by Air Products.
